Frosted Gingerbread Cookie

This is not your run-of-the-mill gingerbread cookie. What we mean is this is not a dry disk of dough that tastes like you licked the inside of a bag of all spice. They are (trigger warning) moist, light, flavorful and, most importantly... frosted!
